Oil hits the pan at high temperature and turns to vapour and fine droplets that the exhaust pulls straight up.

Tossing and flaring. Stir-frying throws oil and sauce into the air and into the flame. Flare-ups push grease-laden vapour into the hood in bursts.

Sticky ingredients. Soy, oyster sauce, hoisin, sugar and starch do not just coat the hood. They bake on and harden into a residue that is harder to remove than plain oil.

Deep fryers next to the wok line. Many Chinese kitchens run fryers for items such as spring rolls, dumplings and crispy dishes, which adds even more grease to the same exhaust.

Long operating hours. Lunch, dinner and late-night service mean the system runs hard for most of the day.

Where the grease goes

Grease does not stay in the hood. It travels through the whole system:

Baffle filters: These catch the first layer and clog fast on a wok line.

Plenum: The space behind the filters collects heavy buildup that you cannot see from the kitchen.

Ductwork: Horizontal runs and elbows trap grease. This is the most dangerous place for buildup, because a fire here can spread through the building.

Rooftop fan: The fan is the most skipped part of the system. Heavy wok grease often overflows onto the roof, which is both a fire risk and a roofing problem.

How often should a wok kitchen clean its hood?

NFPA 96, which the Ontario Fire Code references for commercial cooking exhaust, groups wok cooking with high-volume operations. Those are on a quarterly cleaning schedule at a minimum.

Setup

Typical interval

Wok line, charbroiling or high-volume cooking

Quarterly (every 3 months)

Wok line with 24-hour or very heavy use

Quarterly, or more often if the inspection shows buildup

Moderate-volume Chinese kitchen, limited wok use

Semi-annually

Solid-fuel cooking such as a wood or charcoal roaster

Monthly inspection

If you see heavy grease at your filters or access panels before three months are up, clean sooner. The inspection decides your schedule, not the calendar. Waiting costs you in several ways:

Fire risk: Grease in the ducts is fuel. A flare-up at the wok can ignite buildup you cannot see.

Insurance: A claim can be disputed if the exhaust was not maintained to the required standard. Keep every cleaning report.

Failed inspections: Visible grease on filters, access panels or the roof is easy for an inspector to spot.

Weak ventilation: A clogged system pulls less air, so smoke and heat stay in the kitchen and your cooks feel it.

Roof damage: Grease overflow can stain and damage the roof membrane, which is a repair bill for your landlord and a dispute for you.

Warning signs your wok exhaust is overdue

Grease dripping from the hood or filters

Thick, sticky residue you can feel on the hood interior

Smoke staying in the kitchen at the wok line

Grease marks on the roof around the exhaust fan

A fan that is louder or slower than it used to be

A strong burnt oil smell after service

If you see two or more, book a cleaning this week.

What a proper wok kitchen cleaning includes

Heavy wok grease needs more than a surface clean.
